1 bunch of kale, de-stemmed and torn into pieces
1 large lemon, juiced (roughly 2-4 tablespoons)
1/4 cup olive oil
1 tablespoon honey
1/2 cup parmesan cheese
1/2 cup walnuts
1/2-1 cup dried cranberries
Combine the olive oil, lemon juice and honey. Pour over kale and mix. Sprinkle nuts, cranberries, and cheese over salad. Serve right away, or cover and place in the fridge for a few hours.
